Serving salads made with the freshest ingredients, Gelato made from scratch and frozen yogurt, new café brings another food treat to the Central Platte Valley
Denver, CO (DATE 2008) – Riverfront Park, downtown Denver’s celebrated Central Platte Valley community, is proud to announce the opening of EYT, a quick casual restaurant serving signature salads, homemade Gelato and frozen yogurt. EYT, which stands for “Enjoy Yourself Today” and pronounced “eat”, is owned and operated by Mimi Yang, a lifetime restaurateur who wanted to further elevate the ‘made-to-order salad’ concept with her new café.
“We’ll grill our bacon, chicken, beef and tuna to order, which is something that isn’t done elsewhere,” said Ms. Yang. “People who eat here will enjoy salads that they probably can’t even get at a five-star restaurant, with fresh ingredients and creative menu selections that will make them not only want a salad, but crave a salad! We’ll also serve Gelato that will be made fresh on-site and natural tasting frozen yogurt made popular by the Los Angeles chain Pinkberry. EYT truly takes salad making to an entirely new level.”
EYT’s eight signature salads will include the Garden of EYT’en, the Garbage Salad, The Greek, Let Us Rap, Sweet Lorraine, Little Raven, Naughty Buddha and Bench Press.
Customers will also have the opportunity to choose from multiple ingredients and design their own salad. Tommy Lee will serve as EYT’s executive chef, and personally prepare customers’ orders.
“EYT is the latest addition to Riverfront Park’s thriving retail environment, and we’re very excited to welcome them to this very unique downtown Denver community,” said Amy Miller, CFO of East West Partners-Denver, the developers of Riverfront Park. “It joins the likes of Zengo and McLoughlin’s, two restaurants that are doing very well, Ink! Coffee, Colorado Petfitters, Rita B Salon and many other retailers who are finding a strong foothold here. Riverfront Park is now more than 90 percent leased, with a very solid foundation of independent businesses that are benefiting from a rapidly growing community.”
Information regarding all of Riverfront Park’s retail tenants can be found at www.riverfrontpark.com.
The course East West Partners-Denver charted for Riverfront Park nearly eight years ago has stayed true to form and today the new downtown Denver community rivals some of the city’s most desirable places to live. Located in the Central Platte Valley and tucked under the high-rising mast of Denver’s Millennium Bridge, Riverfront Park continues to grow and flourish in an ideal urban setting.
